I received  a Through the Country Door catalog yesterday in the mail. I looked through it to get some decorating and craft ideas. I did find a few of those but the catalog had something interesting in it. Recipes! They all looked delicious. I decided to try the Swedish meatballs. They were great!!! So, I Decided to share the recipe with you.

Now, this isn’t going to be as interesting as I hoped. I forgot to take pictures through the whole process. This is only the second cooking post I have done so, please forgive me and I will try to get better at this.

Easy Swedish Meatballs

3 slices of bread, crumbled               1/4 tsp nutmeg                                                                 1 Tbsp minced onion                          1/4 tsp milk                                                                       1 1/2 tsp salt                                           1 lb ground beef                                                               1/4 tsp pepper                                      1/2 stick of butter or margarine                                                                                                    (I used cooking spray instead of butter)

Directions

Combine first 6 ingredients in a large bowl; let stand for 10 minutes. Mix in meat. Form into 1 1/2 inch balls; brown in a large skillet. Remove meatballs with a slotted spoon and place them in a 10″ baking dish.

2 tsp. meat loaf seasoning mix                                                                                                       2 Tbsp. flour                                                                                                                                          1 can condensed beef broth                                                                                                           1 cup sour cream

Blend seasoning mix, flour and drippings in skillet. Cook until bubbly. Stir in broth and sour cream. Boil 1 minute.

Pour over meatballs.

Bake at 325 degrees for 30 minutes.

I served mine over wide noodles. For the side dish I had home-grown green beans. Yummy!!!

I didn’t have the meatball seasoning so, I just left it out. My Man still thought they were good.

One change I would make it to cook the meatballs until done and save a couple of tablespoons of drippings to make they sauce. I thought the gravy was too greasy and had to spoon some out.
