Barbecue Cups are one of Dillon’s favorites and they are quick and easy to make. There are many varieties of these that I will share at the end.

  • 1 pound ground beef
  • barbecue sauce (any flavor you like)
  • shredded cheese to put on top
  • canned biscuits

Preheat oven to the degree called for on biscuits. Usually 400 degrees.

Brown meat and drain.

Steam made this a hard picture to take.

Add barbecue sauce to moisten. How much you add is up to you.

Stir to mix.

Spray muffin pan with cooking spray. Place biscuit in each cup and shape to sides.

I didn’t have any canned biscuits so I used the Bisquick recipe on the back of the box. I like this better because MM is usually pretty hungry after a hard day’s work and so is Dillon after running. Ten biscuits just isn’t enough. I just dropped the dough in by the spoonful and shaped to sides of pan.

Spoon meat mixture into biscuits. This pan has been well used. It was my Mom’s.

Top with cheese.

Bake for as long as the biscuit direction call for, usually 10 minutes.

I served mine with oven-baked fries.

For different flavors try adding these instead of barbecue sauce; taco seasoning (follow directions on package) or spaghetti sauce (just enough to moisten). Play around with it and try different flavors.
