I love the smell of Cinnamon Muffins while they are cooking. Their scent lingers after they are done baking.
This is a simple recipe. Quick.
- 1 3/4 cups all-purpose flour
- 1/3 cup sugar
- 2 tsp baking powder (Whew…almost put soda there)
- 1/2 tsp salt
- 1 tsp ground cinnamon
- 1 beaten egg
- 3/4 cup milk
- 1/3 cup cooking oil
In a large mixing bowl stir together the flour, sugar,baking powder, salt, and cinnamon.
Make a well in the center.
Combine egg, milk, and oil. Add egg mixture to all at once to flour mixture.
When I stirred mine something didn’t look right. Oh, yeah!!!
Grease muffin pans or line with paper baking cups; fill 2/3 of the way full.
For the final touch sprinkle with sugar on top.
Humm…I think I might make some more of these for the cross-country meet on Saturday.
