I love the smell of Cinnamon Muffins while they are cooking. Their scent lingers after they are done baking.

This is a simple recipe. Quick.

Preheat oven to 400 degrees


  • 1 3/4 cups all-purpose flour
  • 1/3 cup sugar
  • 2 tsp baking powder (Whew…almost put soda there)
  • 1/2 tsp salt
  • 1 tsp ground cinnamon
  • 1 beaten egg
  • 3/4 cup milk
  • 1/3 cup cooking oil

In a large mixing bowl stir together the flour, sugar,baking powder, salt, and cinnamon.


Make a well in the center.

Hard to see it but it is there. I promise!

Combine egg, milk, and oil. Add egg mixture to all at once to flour mixture.

Mine overflowed. Oh well. Get it? I was pouring it into the well…oh well. Yea, bad joke I know!

Stir just until moist; batter should be lumpy.

When I stirred mine something didn’t look right. Oh, yeah!!!

I forgot to add in my cinnamon with the dry stuff. Oops! I decided to add a dash of nutmeg.

Now it looks right. Brown instead of cream color.

Grease muffin pans or line with paper baking cups; fill 2/3 of the way full.

For the final touch sprinkle with sugar on top.

Bake for 20 minutes or until golden brown. Makes 10-12 muffins.

Humm…I think I might make some more of these for the cross-country meet on Saturday.
